4 Winter Recipes to Stay Warm

Huddled under a blanket, a blistering wind whipping past your window, there is nothing to turn your frown upside down like a warm winter recipe. Equip your kitchen with a blender and crock pot, and soon you'll be preparing family-pleasing treats that warm you from the inside out. Here are four recipes to try as soon as the temperature drops.

1. Butternut and Apple Harvest Soup

Melt 2 tbsp butter in a large pan and stir in 1 large chopped onion and 2 large chopped leaks. Let it simmer for 5 minutes and then add 1 peeled and cubed potato, 2 cups cubed butternut squash, 1 cup diced carrots, 1 quart chicken stock and 1 peeled and sliced Granny Smith apple. Bring to a boil and then let simmer for 20 minutes. Puree the soup in your blender, then return it to the pot and add 1/2 cup of light cream and 1/4 cup dry white wine. Season with salt, pepper and nutmeg to taste.

2. Beef Stew

Cook 2 lbs of cubed beef in 3 tbsp of vegetable oil in your crock pot or stove pot until it's brown. Dissolve 4 cubes of beef bouillon in 4 cups of water and pour in with beef. Stir in 1 tsp dried rosemary, 1 tsp dried parsley and 1/2 tsp ground black pepper and let simmer for 1 hour. Add 3 large peeled and cubed potatoes, 4 cut carrots, 4 stalks cut celery and 1 large chopped onion. Dissolve 2 tsp cornstarch in 2 tsp cold water and add to stew. Let simmer for at least 1 more hour.

3. Spaghetti Squash

Halve a spaghetti squash and remove all seeds. Preheat the oven to 350 degrees and grease a baking sheet. Place the squash with cut sides down on the sheet and bake for 30 minutes. Heat 2 tbsp vegetable oil in a skillet and toss in 1 chopped onion and 1 minced garlic clove. Stir for 3 minutes. Add 1 and 1/2 cup chopped tomato and continue to stir until they are soft. Toss squash with mixture and add feta cheese, basil and black olives to taste.

4. Apple Cider

Pour 6 cups of apple cider and 1/4 cup maple syrup into a crock pot or saucepan. Add 2 cinnamon sticks, 6 whole cloves, 6 whole allspice berries, 1 sliced orange peel and 1 sliced lemon peel (spices and citrus bundle may be wrapped in cheesecloth for easy removal). Let the mixture brew for at least 10 minutes. Remove bundle if desired and then serve!
